RAX was the place for Roast Beef Sandwiches...but what they did the very BEST was a truly generous SALAD BAR!
Their sandwiches were OK, but their salads were THE VERY BEST!
"Beefsteak Charlie's had a salad bar with MOUNTAINS of COLD BOILED SHRIMP!!! I cried when they went away..."

I also wept when our Beefsteak Charlie's was shut down!

Deviating a bit from the actual topic (the following are not what you would call "fast food" restaurants), I feel compelled to mention a few of the "restaurants which had to go away because my wife and I loved them so much." I include here only the chains, and I know some of these exist in other places still:
The Good Earth -- the tastiest, most appealingly seasoned and yet healthiest food ever prepared (disappeared without warning)
Marie Callendar's -- Great food and the best selection of pies anywhere -- had REAL rhubarb pie, not that mess with strawberries in it (disappeared without warning)
Luther's -- Real honest-to-God Texas barbecue, including sliced brisket (and anyone who has sampled this earthly delight knows that Texas barbecue is something special) (disappeared without warning)
Cooker's -- Great food, some interesting regional items such as fried green tomatoes, and terrific, tender and meaty babyback ribs (disappeared without notice)
Red, Hot & Blue -- Memphis barbecue is ALMOST as good as Texas barbecue, and this place (which still exists in Memphis, Washington DC and Savannah) kept us in barbecue heaven for a couple of years before...you guessed it...disappearing without notice!

Dana, I have a couple of "restaurants which had to go away because my wife and I loved them so much" TOO!
ALASKALAND was THE place to go for ice cream sundaes, and I'm talking about truly Spectacular Ice Cream Sundaes...I've never seen anything like these before or since. The "Alutian Volcano" was a sundae for two; you chose your favorite ice cream flavors, and toppings. The dish was served with a flame on top.
The "Mt. McKinley" was a sundae for six to eight, made to order, with flags all over.(disappeared without warning)
LA CREPE made the crepe into any and every kind of dish imaginable. From appetizer through dessert, everything crepe. It may be hard to imagine, but this place was the greatest. (disappeared without warning)

A few comments:
There's an Arthur Treacher's shop within walking distance of my apartment complex. If I got in my car and drove, I'd be there in a minute, tops.
Dana: There's a Red, Hot, and Blue in Fairfax, VA, only a couple of miles from me on Rte. 123. I haven't tried it yet, though; would you recommend it?
Burger Chef? I've never heard of that. But Fuddruckers? Now that place serves the best hamburger I've ever eaten, and it has a massive fixins bar to put whatever you could possibly want on it. So good, and so messy!

I'm always hesitant to recommend a restaurant to people, given the multitude of tastes. I would say, that (a) if you like good barbecue (not that sliced shoe leather served at places with names like "Sonny's"), (b) if the terms "pulled pork" and "pulled chicken" and barbecue brisket cause your mouth to water, and (c) if you might enjoy a casual "Memphis blues" motif, I think there's a good chance you would like Red, Hot & Blue. The prices are quite reasonable and you can stuff yourself to whatever extent you desire. My wife and I loved the place, and are still in mourning that it deserted South Florida.
We also had a Fuddruckers at one time, and no question, it is the gumpy hamburger experience king! Great stuff, don't wear anything you mind having ketchup, mustard and grease stains all over. I also miss Burger Chef (though at a different level -- not in the same league as Fuddruckers) and its massive condiment bar. That's probably why they went belly-up!
Our Arthur Treacher's restaurants are "embedded" here within another franchise called Miami Subs. Basically one can order from either menu, and Treacher's menu seems unchanged from the deep-fried selection it offered when it first appeared way back when.

More places. No fast food, but good restaurants:
KANSAS CITY STEAKHOUSE I think this is in Plantation, FL. Not sure of the town. But their Prime Ribs are simply amazing
EL CID Paramus, New Jersey. Spanish/Portugese flavor. When you order the Prime Ribs at $29.95, they literally give you 4 pounds of amazing meat. They have other amazing chicken and shrimp dishes.
ANDREAS Ho-Ho-Kus, New Jersey
Italian. Call for reservations ahead of time, because Friday and Saturday nights are busy. Bring your own bottle of wine. They have excellent dishes including a wonderful Chilean Sea Bass, Escarole soup and other favorite Italian dishes.
CRABTREE's KITTLE HOUSE Chappaqua, New York
Actually, this is a biases choice because I am getting married there. But, not only is the dinner amazing, but the Sunday brunch is beyond description for $24.95. You get amazingly delicious gormet dishes which include baked salmon, roast beef, quiche, and too much to list.
THE SECRET OF SUZANNE Ridgewood, New Jersey
Healthy, organic, home cokked meals. I always get the same Vegetarian platter (I'm no vegetarian) because there is always something different in the mix - from eggplant rollatini, cous-cous, fresh hummus. Also includes soup and salad
Ok that's it. Lunch time!

...which reminds me of yet another new restaurant chain that has taken over this area by storm: WAFFLE HOUSE.
Almost overnight, there are about a dozen of these all over!
The architecture and decor are the ugliest imaginable...I'm too a'scared to try the menu!

The nice thing about restaurants that do have a fixin's bar though is that at least I know I'll be served a plain burger to begin with!
