Hmmm, very tough question to answer. But I would say "Binary Sunset"- Star Wars. There is so much hope, sadness, longing, and power put into this one piece of music. To this day I get goosebumps when I hear it.
A couple of honorable mentions The Planet Krypton- Superman The Enterprise- ST:TMP Enterprise Leaves Drydock- ST: TWK

Beautiful choice. Probably should have been mine as well....

I'll echo this statement. It's such a powerful piece of music and it captures everything.
"Escape from Suburbia" from Poltergeist, but I can rarely bring myself to just play the track on its own, because it feels even better to play the whole score (which is my absolute favorite Goldsmith) and thus build up to that finale. I also find myself often pulling out "The Final Conflict" from, well, The Final Conflict. There are many other favorites, but I can't remember the cue titles at the moment.
The cue that pretty much made me fall in love with film music was Goldsmith's "Clever Girl" from Total Recall. I had never heard anything like it (and not quite since, actually).
However, if I could only take one cue to a desert island it would be Marco Beltrami's "Bedside" from The Invisible...

...and Beltrami's "NC-17" (retitled "Sidney Wants It") from Scream.
