I am looking for some examples of Pop/Rock song structure that follow this order:

Intro
Verse 1
Chorus
Verse 2
Chorus
Bridge
Instrumental Solo
Chorus
Coda/Outro

I am finding it very hard to find songs that follow this structure but I'm sure they're out there somewhere...

It's more common I think to have a verse three before that last chorus ...

as in:

S & G use that format a lot, but surely nothing's ever stuck to a template.

This one's close, but again, there's a verse three after the solo trio.

Another thing is that it's very common to have verse 2 follow on directly from verse 1 with the chorus only being used afterwards, mainly to not spill all the beans at once:

The Byrds:
My back pages or
Turn, turn , turn.
Am quite certain both follow what you seek.

Yes, you are quite right about the Verse 3 coming after the Instrumental, left that one out...
Thanks for the suggestions so far.
It is interesting that no current Pop songs seem to follow this structure at all.
Gone are the days of Instrumental solos
And bridges either are left out or even heard twice

Here's the perfect example of the template:
