It was stated in the film- she was going into training so she could become a 21st Century Zoologist. As far as her fling with Kirk, well was it really a fling? Both were playing games (flirting) in order to get Intel out of one another. They might have had one passionate night together but ya know you can't domesticate Kirk.

There is a great DC Comics graphic novel that brings her back at the start called "Debt of Honor." She's observing George and Gracie. She's turned up in a few books as well.

I never saw her as a love interest for Kirk. I always saw their last exchange at the end of the movie as Gillian politely giving Kirk the brushoff. It has been a while since I saw the film, but I recall her essentially saying "I'll call you" with pretty much zero sincerity.

I think she was just a little tiffed that she had to pay for the Pizzas and the Michelobs.

Talk about blatant Product Placement/Naming.

I totally agree with this and Shatner's look at said brushoff shows he felt the same way about it. And was pretty shocked.
