Your Uncle Phelps likes sharp cheddar on rye bread (with the seeds; otherwise it's not rye), tomatoes, onions, and cracked black pepper. Oh, and mayonnaise, which I know you people don't eat.
Cenarth Brie in my local supermarket, Waitrose. It's a lovely Welsh cheese, very soft & with a hint of mushroom in the flavour. I'm having it for tea tonight, larded on some rustic rolls & washed down with an American Zinfandel (from Sainsbury's). You've got to treat yourself these days.
I like almost all cheeses, especially with a good wine, I'm curious about their taste as soon as I see one... but I have just discovered too late my lactose intolerance which is the cause of many of my health problems, so sad.

Oh, that's a drag. I can't eat cream anymore (or anything containing cream), as I blow-up like a balloon, but thank god, milk & cheese are still okay.
I'm usually a devotee of Swiss cheeses like Madrigal and Jarlsberg, but I've become a fiend lately for Trader Joe's "Creamy Toscano, soaked in Syrah." Maybe it's the black peppers.
Thanks to Sainsburys, I've recently discovered a creamy blue cheese which, despite the Latinate name of Montagnolo Affine, is actually German. The particular variety they sell has a fairly unappealing grey rind, but ignore that and you have a wonderful delicate brie-like cheese with a hint of spiciness in the veins.
Still having this maybe three times in a two-month stretch. Bought some today, as it happens. And I’ve corrected the spelling, above.
