I read about The Beatles' "Yesterday" being the most covered song 2,000 versions) and it led me to ask the following question:

What is the most covered theme from a feature film?

I'd put my money on LOVE STORY or "Lara's Theme" from DOCTOR ZHIVAGO. With the demise of "middle-of-the road" singers (think Andy Williams, Jack Jones) and "muzak" orchestras (think, Enoch Light, Ferrante and Teicher) no film theme from the last 40 years really has a chance to be covered much.

There are actually two categories here. Orchestral themes that became songs, and themes that started as songs. LOVE STORY and DOCTOR ZHIVAGO are the former. I think "Moon River" and "Over the Rainbow" are the latter.

Usually a film theme either has to be a song or become a song to have a likelihood of being widely covered. The James Bond Theme is one of the few candidates that did not become a song.

"Exodus" by Ernest Gold and "Born Free" by John Barry should also be contenders.

Since "Born Free" is a song and "Exodus" is not, there's probably a much greater chance of more "Born Free" covers.

Nowadays, even Anton Webern's pieces are "songs". The Jaws theme is a "song" too.

It makes sense that the most-covered songs ("Over the Rainbow," "White Christmas") would have been among the oldest, from not just popularity but longevity.

My own guess was Bronislau Kaper's "Hi-Lili, Hi-Lo," from his Oscar-winning LILI (1953). That movie opened before I was born, yet I grew up learning its song because so many different renditions continued to get radio airplay throughout my childhood, as well as performances by multiple middle-of-road vocalists on TV variety shows.

That song turns out to be only two covers below BORN FREE and EXODUS.
