Grunts, groans, sweat! The knife is ever so close, but wait! The good guy is pushing it away! Most knife fights are over quickly and are more slashing than stabbing - at least until the coup de gras.
I guess your last line is referring to real-life knife fights? Maybe movie knife fight scenes in the clinches (to borrow a boxing term) are actually in slow motion.

Good point, I guess I could have worded it better, maybe knife attack. The knife-wielding villain attacks the good guy and they go to the ground...

People have car windows open for no reason, just so the camera can see the occupant.
"The man from U.N.C.L.E." had many a car without a windshield for exactly that reason. It's fun to see how much everyone has to squint to keep the wind out of their eyes, just like they have to squint during the day for night to keep the sun, I mean the moon, from blinding them.

I've probably posted this before, but no one ever shows the consequences of being punched in the face (kicked in the face even), there should be big swellings & bruises & maybe a tooth or two missing, but...nothing.

They show a gun pointing at a distant target, but although the angle works on screen for that one camera shot, it would clearly be missing by a mile in real life.
In western movies, when a cowboy takes off his boots and he's not wearing any socks. In reality, that would be very uncomfortable and would probably cause blisters and all manner of other foot ailments.

Baddies going to stab someone (usually the hero in the last fight) by taking the knife in both hands and raising it over their head, and pausing - usually long enough to get shot in the back. Then they more often than not fall away, revealing the shooter.
