I've liked Murphy's work on other things, but agree his Buffy work is among the least distinguished of his output. Thankfully the show took a major turn for the better and so did the music!
I do still really enjoy Season 1; the dialogue and characters are still delightful. It's just that the villains (and most episode plots) were mediocre, but maybe that was intentional B-movie homaging or something. It grew into something much better during season 2.
How I would do this set:
Disc 1:
15-20 minutes of Carter Burwell's film score
15-20 minutes of highlights from Walter Murphy's first season scoring (honestly all it needs)
40-50 minutes of the best cues from the second season by Adam Fields, and Clement & Murray
Disc 2: all the best unreleased highlights from Christophe Beck (I know, he needs two more discs)
Disc 3: all the best highlights from Thomas Wanker's work on the fifth and sixth seasons (also difficult to fit on one disc, I promise)
Disc 4: all the best highlights from the seventh season, 10-12 minutes of Douglas Romayne and 65-70 minutes of Robert Duncan
This plan would ensure all composers get decent representation, which we know LLL likes to do based on their Trek and other TV score sets.

The Hyena episodes was one of only two scores by Murphy I mentioned should be on the set.
The other is the rejected score for the season two premiere (since we've not heard it). Assuming the information about having done one, isn't incorrect.

BUT...what I would love is:
Disc 1: Movie score, Murphy, Clement/Murray (I cant think of ONE cue from them, tbh...), Fields
Disc 2: Christophe Beck
Disc 3: Christophe Beck
Disc 4: Wanker, Duncan and Romayne. Imo, season 7 dont have enough to have a whole cd. And Wanker has a lot of really nice emotional cues in which most of them are quite short. And not too much good suspense music.
That's my dream box set! But I am sure LLL will please me no matter how they divide this!
I'm glad I'm not them, cause this must be a really hard task!! lol!
But of course, each to it's own! One thing we know for sure is that they will give something for everyone to enjoy, no matter which composer they prefer

When Justin went through the series, he pointed out highlights from the Clement/Murray scores. There was some good stuff.

Justin also did a good job of going though most of the Wanker scores and pointing out a lot of good highlights. Honestly there would be no trouble filling up a whole disc with the best of his music. He did score almost two whole seasons of the show, after all! And I personally think season 7 had a lot of great music too. The music was better than most of the stuff that season, which overall I felt was weaker than season one!

Whatever is on the box set, it will be a gift. It's been 21 years since the show premiered, it's 10 years since the last soundtrack. We can be happy about anything we get, really.

In addition to the movie score, I do expect only Murphy, Beck, Wanker and Duncan to be on this set though. MV said music from all seasons, not music from all composers. And it makes the most sense to focus on those who have contributed the most score to the show.
UNRELATED:
I just rewatched the "Prodigal" episode from Angel and noticed that they remixed the cue from "Somnambulist" that you liked for the end when Kate visits her father's grave, acathla. Really haunting cue. Right up there in the Angel hall of fame.

I have gone through all the Clement/Murray episodes only to listen to the score (with dialog removed thanx to 5.1 audio) and I just couldnt find any cues to keep, tbh. But that's me. I'm so biased with Beck that NO ONE is good enough!! haha! 
And yeah, come to think of it, Wanker do have a lot great cues. He was very good at simple piano melodies.
And of course "Run" from Into The Woods and "Yellow Crayon" from Grave. They are perfect!
And Duncan made a few very nice themes for season 7. LOVE the Slayer/Chosen theme (or whatever it's called) which pops up in several episodes where she shows of her heroic Slayer skills. And the Buffy/Spike theme was nice. There's a really nice version of it in Touched where Spike talks to Buffy and tells her that she's the "one".
I would love to have more score from Chosen. He really did a bang up job on that one!! I was hoping they'd bring in Beck for this (like with The Gift), but the score turned out to be perfect anyway, imo.
And yes, both Wanker and Duncan do actually have enough good stuff to fill one CD each.
I just divided them like that because the selfish me wants as much as Beck score as possible haha!
And btw, i think I'm one of those few who really loved season 7! I thought it was such a step up from the soapy season 6 (the musical NOT included)

I liked season seven too, but it is definitely one of the weaker seasons plot-wise. There is just a lot of filler and less character-centric stuff. It feels like most of the season is build-up and speeches. If you compare that to the season of ANGEL from the same year (season 4) which was just a relentless fast and epic rollercoaster, it just pales in comparison. I don't even have a problem with the potentials, because 1.) they weren't that bad and 2.) the pay-off is all worth it.
The S7 problems are more along the lines of:
1.) Terrible Pacing and lots of plot holes.
2.) The First was a fairly lame villain with no real power and no interesting relationships. Also, probably due to budget constrictions and scheduling difficulties, they didn't really seize the opportunity to have dead characters guest star as the First, they had SMG pull double duty almost through the entire season instead.
3.) Too much focus on Spike. If almost every line out of the mouth of your larger than life feminist icon is the name of a man, then something is wrong.
4.) Most of the characters really only stand around, looking worried.
My favorite episodes from S7 are actually the early MOTW ones as opposed to the later arc-heavy episodes.
That being said, the music in season seven was really good. I liked Wanker's score through season 5 and 6, but it was a nice change to have someone else score S7 of the show. Duncan brought a whole other feeling to the season.
Do you have more goats? I will help you sacrifice them to one day get an Angel box set!! haha!
Personally, I want to sacrifice a dragon. Let's go to work.

I always thought the new theme existed because the characters were in such a very different place in the third season. “Close Your Eyes” is a sweeping theme that emphasizes the passionate connection between Buffy and Angel, while the third season theme is more about the facing the realities that divide them. The theme is much reserved and mature, leading to a place of quiet acceptance in “One Last Look.”
That sweeping quality is what makes the reprise of “Close Your Eyes” in the Angel episode “I Will Remember You,” in which their relationship is suddenly unrestrained for two acts, so effective.

I really like both, but I`m totally obsessed with first one, so nothing will ever be good enough (for me) unless it`s that one.

Yeah, this makes sense! He kept using it for the first 3-4 episodes of season 3, but those scenes were all still about the very tragic/heartbreaking side of their relationship.
Btw, is there sort of two versions of the new season 3 theme? "One Last Look" (or "One Last Moment" as it was called in the Rounder release) is the same one used in all the later episodes like when Angel breaks up with her, the "I`m not gonna say goodbye" moment in GD part 2, and then there`s this one used in the first half of the season when he was still a "hell-beast" and i.e. the intro to "Magic Snow Music":
