I would choose the same one we danced to 28 years ago on Valentine's Day. We danced to "Through The Eyes Of Love" sung by Melissa Manchester from the movie "Ice Castles". We had a live band and the lead singer did a lovely job and did Ms Manchester proud. We will dance to it again this year and it will be just as romantic as it was 28 years ago.
Me and my groomsmen entered the hall to The Pulse of Events (Meet the Press) by John Williams, and tons of guests told me it was the best wedding entrance they'd ever seen (me and the boys worked out some elaborate routine where we pretended we couldn't find the front of the hall). My wife and I danced to Blue Moon (I think it was the Ella Fitzgerald version). And I danced with my mom to the Madame Bovary Waltz, a shorter version Rozsa recorded as source music for one of the other MGM films he used it in (from the FSM box set). And there was NO window smashing! And we used the Theme from Jurassic Park after the ceremony was done and the JP presented us to the guests after signing/witnessing the marriage certificate. And for dinner music we had the DJ mix in some tracks from the Keisuke Wakao John Williams CD with other music he was choosing. Since of course the dance would focus on pop music, I had to get in as much film music as I could otherwise!
I wanted the march theme from SYMPHONY OF SIX MILLION for our processional. I called the publisher and got a very old gent on the phone who offered to make up and send me a lead sheet. I then got a harpist and cellist from Julliard and we put an arrangement together. Really nice. Of course, this was 35 years ago. Can you imagine someone at a publisher going to the trouble and doing that today??

That is a really nice story, and sadly you're right, it's likely not something that would happen again!
When I get married, I will use the dance I learned from this wedding gathering of two friends of mine a few years ago the day they were married. It took a while to learn, not very romantic but fun.
