I don't know much about Bollywood score soundtracks, but I recently stumbled on two beautifully orchestrated songs by the duo Ajay-Atul for the recent film SAIRAT (WILD). They feature the Hollywood Studio Symphony. Here is a Youtube video with clips from the recording sessions:
The catchy songs, "Sairat Zaala Ji" and "Yad Lagla" are in all the usual places (YouTube, the iTunes store, etc.). Again, they have very beautiful extended orchestral passages. Check 'em out!
And Yes, ASHWARIYA RAI is a goddess but I prefer the beauty of Sushmetha Sen.

Sushmita Sen's dance number "Mehboobha Mere" in the film "Fiza" is one of my favorite Bollywood scenes of all time. It's tough to imagine a sexier dance number (and my wife absolutely loves her clothes in that sequence.)
A close runner-up is Madhuri Dixit in the notorious "Choli Ke Peeche" number from "Khal Nayak," of course. (A song that is simultaneously incredibly irritating and amazingly catchy. We've played this for some people, and half LOVE it; the other half want to jump out a window.) It helps if you see the video it's attached to, of course. :-)
Finally, I also love Urmila's number in "Kambakth Isqh" from "Pyaar Tune Kya Kiya" -- that song just ROCKS.
