Well, since this is about "Love Theme" and not love themes, I would say that…
A) track titles have become less explicitly descriptive over the years. You're much more apt to find a love theme entitled "Till the Day We Die" (I just made that up) than "Love Theme."
B) at one time, soundtrack releases were very often recorded (and arranged) specifically for album, so the love theme would be its own albumized track with that title. Now, we generally hear the love theme as it's interpolated into other tracks as recorded for the movie.
