I rather agree with GoblinScore above about that amazing action cue from Carlito's Way, but since the thread title is Best Cues, plural, I'll try to think of a more lengthy list...
I would definitely say that Die to Live and Pardon Goddess of the Night from Much Ado About Nothing should qualify. Opening Title / "O for a muse of fire!" and "Once more unto the breach" from Henry V. Though the final battle music from that score does feature those awesome drums, it doesn't have the sustained intensity of those two cues.
Let's see...definitely something from Needful Things and Frankenstein and Dead Again (probably Death of a Mad Son).
But then there's the less-intense but still gorgeous stuff like Kissing in the Rain from Great Expectations, or equally sublime stuff he wrote for A Little Princess or Into the West.
My single favourite Doyle track remains "Snow in August" from Nanny McPhee.
Some other cues I keep coming back to: -"Battle for Varden" from Eragon -"Kissing in the Rain" from Great Expectations -"Opening Night Pressents" from Igor -"Climbing the Wall" from Killing Me Softly (probably not on many people's list, but I just love that theme) -"Escape from Capri" from The Last Legion -"Please Wait" (or any other variation of the Love Theme) from Frankenstein -"Overture" from Much Ado About Nothing -"The Arrival" from Needful Things (especially for the opening and closing motif) -"La Lettre" from Nouvelle France -"Please forgive me" from Wah-Wah -"You're doing it for us" from Est-Ouest

The Headlines (Dead Again) Carlito's Way (Carlito's Way) End Titles (Needful Things)
I would use the 'End Titles' track of Needful Things as it starts off reprising 'Art & The Minister' and then reprises 'The Arrival' as well as the climax of "Just Blow Them Away". It's a great summary of the score.
All you *really* need is "The Wedding Night" from Frankenstein.
Some of the best two minutes of soaring, rapturous beauty ever composed for film.
I'd suggest "The Creation" from the same score. It might be the Doyle-iest action cue of all time. Along with the sublime "The Wedding Night" you can get a perfect picture of the man's art in just a few minutes.
Great that somebody mentioned "Courage And Kindness", love the whole Cinderella score...especially "La Valse De L'Armour", "You Shall Go", "Who Is She", Pumpkin Pursuit" and - of course - "Courage And Kindness" are outstanding!
Other great cues include: "Fate and Destiny" (Brave) "Science and Magic" (Thor) "Violin Romance" (As You Like It) "The Goodbye" (A Little Princess)
