People often confuse karaoke tracks with instrumental tracks. Karaoke tracks usually aren't the original orchestral music and the chorus remains. Also, an additional instrument may be added that mimics the lead vocal to help a person sing along. Instrumental tracks don't have the same purpose as karaoke tracks. The intention of an instrumental is simply enjoying the music without the vocals - not to sing along.

I've heard the instrumental tracks of some of the Little Mermaid songs without the vocals. They are shockingly simplistic, and dull without the singers voice.

That's because it's not meant to play without vocals - the vocals carry the melody, and the instruments are there for underscore support.
Vocal-less tracks are a nice novelty, but not really a necessity IMO - the same as, say, a recording with the drums removed, or with the trumpets removed, etc.

But how does one enjoy it with the melody missing? It's like putting a violin concerto without the violin -- sure it'd be great for someone learning the piece but there's a huge void missing. And it's one of the main reasons I sold the Blazing Saddles release and am pondering not getting the expanded Addams Family. (Now there are cases where the orchestral music double the voice and this it works fine, and early 20th century songs quite often did this on the piano part for instance, but this is the exception rather than the rule)

I don't know about The Addams Family, but the original sung version of Blazing Saddles is definitely on that release. .
I was in 3rd grade when the flick came out and Feed the Birds did me in. After seeing Saving Mr. Banks a month or so ago, I pulled out the Poppins DVD from the library. I think it's the 1st time I'd seen it in 50 years. The scene when Banks slowly makes his way to the bank with the Birds instrumental reprise and wordless chorus absolutely did me in. And even though I've still pulled out the LP in those ensuing decades, I never realized that chorus on the LP was looped in with the Andrews vocal and was not part of the actual vocal track . Until now. Oh, my. Just thinking about the Tomlinson performance and that music is doing me in as I type. Heading to youtube...
