James Horner (love how he makes sweeping music for nightfalls in Avatar and The Amazing Spider-Man), Alexandre Desplat (something like the second half of Escape From The Camp or Love In The Water for the second Largo Winch score would be great to hear). And obviously, Howard Shore .

James Horner would be my first choice. If not available, than Marco Beltrami. Would love to see him take on an epic like Legends of the Fall. Or maybe John Ottman, I believe it was on The Usual Suspects dvd where he mentioned he'd love to a big epic film
My first thought was Ennio Morricone. Then John Williams. But he would turn this romantic picture into a sci-fi action piece quickly. Which is not s bad thing.

Gabriel Yared: The big, full, and epic sound he demonstrated in pretty much every single cue of his rejected score to "Troy", is all the explination that's needed.
I'd go with Holdridge or Yared, but then again, that's based upon not having seen anything that was shot.
