I have only three box sets, two from the modern era, but I think they're great. It's a fair-sized commitment but worth it for the scores you really value.
Pre-Internet, I bought most of GNP's Irwin Allen discs separately before finding out there was a box. If it wasn't in the record store, you pretty much didn't know about it. And I would have snapped this up:
GNP's first STAR TREK set was just three discs, so it seems like the LLL TMP set is essentially a box in itself. Or you could make a giant slipcase for the movie expansions:
And if you go down that road, a lot of things could be repackaged as box sets. Intrada's BATTLESTAR GALACTICA project amounts to a seven-disc set, and the bonus disc would be Stu's performance with the Royal Scottish National Orchestra. Eight discs, just like SUPERMAN:
This next one is more niche-oriented, but THE BIONIC WOMAN could have gone in a slipcase:
Fun stuff. But if you own any real box sets, maybe you have some impressions to pass along. I've been on a big SUPERMAN kick lately, so that box is really earning its keep.

I only have one film score box set. Like you said, they can be a bit of a financial hit to your wallet, but when it's for something you really value and truly enjoy, it's worth it. For me, that's definitely Concord's Indiana Jones: The Soundtracks Collection.
Even moreso than the original Star Wars trilogy, these are my absolute favorite scores, and I was very excited when the box set was announced. I only wish they could have expanded the Crystal Skull album, as there was so much great stuff left off, but what can you do? Other than that, I've enjoyed this set a great deal over the last few years, especially the expanded Temple of Doom and The Last Crusade. It was great to finally get some of my favorite unreleased tracks from those two at long last.
EDIT: What was I thinking? "Only one film score box set." I went to put Indy back on the shelf and spotted Star Wars Trilogy: The Original Soundtrack Anthology. How could I forget that?
I was at Costco one day with my family in 1993 and happened across it while browsing CDs. (Back when Costco actually had a CD section.) Having only ever had the first two scores on vinyl, I was excited by such a find. I stayed up all night buried in my headphones, listening to the entire set while reading the booklet cover to cover. It was a terrific collection. Although I rarely listen to it anymore since buying the 1997 two-disc soundtracks (which I didn't even know were released in 1997 and instead got around 2002/2003), it remains one of my most prized items in my soundtrack collection.
I had soundtracks before this set, but this was the turning point that permanently cemented my love of film scores and began a whole new chapter for me.

I have La La's Star Trek TOS, the Indiana Jones set, the Superman FSM set, the FSM Ron Jones STTNG set, The Irwin Allen GNP Crescendo set, the Lord of the Rings expanded scores sets, the FSM Rozsa set, the FSM Bernstein set, Varese's SPARTACUS set, La La's X Files, and numerous multi-disc sets (FSM BEN-HUR, but that's a clam-shell, and not in a box [Box Set to me is a multi-disc set actually in a cardboard box], plus the series discs that are illustrated, but - again, not in a box, so not a box set), so I would say my Box Set Experience is pretty good, for me, and for the labels.

The only one I currently own is the Star Trek TOS box and it's been the ride I always hoped it would be. It's also difficult to imagine something else besting it, and with LLL pretty much the only label doing box sets now, and with them recently mentioning a slowdown due to the cost, the Trek box may indeed never be topped.

I still hope LLL does that, as BTAS is more than deserving. I would gladly purchase a box for $5 even with a purchase of Volume 3.
As for Jaws, the only recently available/properly-released title has been the album for Jaws 3. A box of everything else would be great. Maybe if Intrada can manage the licensing, as it would almost certainly come from them, they'll deem it worthy to produce one. And leave room in there for 3's album.
